Amelia Bedelia’s Sheet Cake

The Girl loves reading now so, naturally, her Auntie Fun gifted her with a new book this Christmas: Amelia Bedelia Bakes Off. That crazy Amelia Bedelia finds herself working in a bakery for the day and misunderstands idiom after idiom until she somehow wins a cake-making contest that she didn’t even enter herself. If only we could all be so lucky!

The Girl loved the story (of course) and she was so excited to see that there was a sheet cake recipe at the end of the story. I was reluctant to make it since the instructions start with you mixing all of the ingredients directly into an ungreased dish (which sounds so unhinged to me), however, if my kid wants to make a questionable cake with me, I am all in.

Here’s my little angel mixing all the ingredients right in the ungreased pan. I suppose I appreciate the one-dish nature of this cake, but I’m glad that we used our Pyrex dish instead of one of our metal cake pans so 1) she could get right into the rounded corners with the whisk/rubber spatula and 2) I could see right into the dish and quality control to make sure everything was mixed all the way through.

But the craziest thing is that this random Amelia Bedelia cake came out pretty delish! The center did collapse a little bit, but that was not anything that a little bit lot of homemade peanut butter buttercream frosting couldn’t fix. …and we added some heart sprinkles to increase the cuteness.

Would 1000% make this with The Girl again. Maybe in two round layers. And maybe with more peanut butter frosting. Either way, I don’t think I’ll question that crazy Amelia Bedelia again.
